"Izvestia" calculated how much this year will cost traditional salads for the festive table on New Year's Eve. For these dishes, the editorial staff used Rosstat data on prices for October, today it is the most relevant information, information for November will appear much later. So, the edition took into account the classic for Russia recipes for salads, which will need boiled sausage, herring, canned vegetables, eggs, mayonnaise, potatoes, onions, table beets, carrots and peas.
All the ingredients per 1 kg of each will cost a little more than Br1.6 thousand, which is 10% ahead of last year's result. If to count separately the composition of each salad for a family of four people, then the herring under a fur coat will cost Br263 (+13% to 2023), while Olivier - Br529 (+9%).
The most active during this period was potatoes, which added 65% per 1 kg over the year. It is followed by onions (+26%) and beets (+23%). This year, Rosstat has not recorded any ingredient that has dropped in price.

For their calculations, the editorial staff used the salad recipes that Rosstat specialists take into account. According to them, herring under fur coat requires herring (350 g), potatoes (400 g), beets (350 g), carrots (200 g), chicken eggs (2 pcs.), onions (100 g) and mayonnaise (300 g). For olivier you will need canned cucumbers (500 g), peas (380 g), potatoes (500 g), carrots (200 g), chicken eggs (4 pcs.), cooked sausage (300 g), mayonnaise (200 g) and onions (100 g).

The cost of a basic set for this salad for four people in large retail chains for the year increased by 2.35%, to 356 rubles, told "Izvestia" chairman of the presidium of the Association of Retail Trade Companies (ACORT) Igor Karavaev. This amount is sharply lower than the average value according to Rosstat; the prices for the most affordable food products were taken into account in the calculations, he added. Retailers used practically the same salad recipe in their calculations.
- In the run-up to the New Year, large retail chains are trying to ensure low prices for in-demand products, despite rising costs and the impact of the harvest on the cost of vegetables. Retailers have managed to keep the base cost of the main New Year's salad at a level well below food inflation," the expert said. - In absolute figures, the cost of ingredients for favorite New Year salads in large retail chains remains more affordable.
So, according to the organization, now the cost of potatoes in retail chains is almost 18% lower than the average price in the country, recorded by Rosstat. A similar situation with other products: prices for carrots in retail chains are lower by 37.5%, for beets - by almost 15%, for chicken eggs - by 14%, and for herring - by 10%. This was achieved thanks to investments in reducing markups on socially important vegetables, as well as through the development of own brands in the categories of sausages and canned vegetables.
Why potatoes are becoming more expensive
Dmitry Leonov, Deputy Chairman of Rusprodsoyuz Association, explained to Izvestia why the cost of potatoes has increased so dynamically: it happened for several reasons at once. The fact is that last year agrarians gathered a record harvest of this product, which provoked a drop in prices for it, they actually coincided with the cost of potatoes against the background of rising costs of credit, fuel and lubricants, logistics, labor and other factors.
- As a result, more than 8.8 million tons of potatoes entered the market in 2023, which is a record value in the history of the Russian agro-industrial complex. The profitability of its cultivation has sharply decreased, as a result of which this year agrarians reduced the area sown for potatoes by 20 thousand hectares. Prices for this vegetable were at low levels from September last year to mid-May this year, - said the expert. - This situation benefited the buyer, who has the opportunity to buy potatoes at a low price, but not the producer.
In 2024, agrarians have already started to refuse to cultivate the crop, he added. Further price dynamics will depend on the balance of supply and demand, as well as on the retail trade, which often buys abroad, complaining about the better marketability of imported products, said Dmitry Leonov.
The dynamics of the cost of salads is slightly higher than food inflation. According to expert estimates, it exceeds 9% in annual terms. But food inflation is an average value for individual products, they are not fully included in salads, so the figures may differ upward from the average level, as, for example, in the case of potatoes, explained "Izvestia" associate professor of the basic department of trade policy of Plekhanov Russian Economic University Svetlana Kazantseva.
He emphasized that large retail chains have the opportunity to restrain average prices for ingredients compared to the national average: for a number of goods, companies can receive discounts from suppliers or limit their markups.
